Chip shop extraction cleaning is the removal of range-fryer grease from a fish and chip shop's canopy, filters, ductwork and fan, normally every three months because a range fries for 12 hours or more a day. Published UK ranges for a single-range shop run from about £450 to £900 for a full TR19-standard clean with a certificate. Swansea Canopy Cleaning arranges the quote and our partner contractor does the work.

Kitchen extract system in a fish & chip shops kitchen being cleaned to TR19 standard

A chip shop range is the hardest-working piece of extract equipment in any high street. Frying ranges run from lunch to closing, the fat is hotter and heavier than a restaurant fryer, and the grease it throws into the canopy and ductwork builds faster than in any other kind of kitchen. Swansea Bay has chip shops in every parade and on every seafront — Mumbles, Aberavon, Port Eynon, Burry Port, the city centre and the valley towns — and every one of them is in TR19's heaviest cleaning band.

We arrange TR19-focused extract cleaning quotes for fish and chip shops across Swansea, Gower, Neath Port Talbot and Llanelli, through a specialist provider who knows range extraction and issues the certificate your insurer wants to see.

Why chip shops are quarterly, not six-monthly

TR19 sets cleaning frequency by daily cooking hours, and a chip shop frying 12 to 16 hours a day is "heavy use" — a full extract clean every three months. But hours are only half of it. Range frying produces more airborne fat per hour than griddling or grilling, so a chip shop reaches a dangerous grease depth in the duct well before a restaurant working the same hours. Many range manufacturers say the same in their own maintenance guidance.

The range, the canopy and everything above it

Chip shop extraction usually has three parts and only one of them gets cleaned routinely: the range's own filters and grease drawers, which staff handle; the canopy or integral hood above the range; and the ductwork and fan, which run up through the building to a roof or wall outlet and which nobody sees. A TR19-standard clean covers the canopy and filters, the full duct run and the extract fan, with access hatches fitted where the duct cannot otherwise be reached. Grease readings are taken before and after, and you get a certificate, photographs and a next-service date.

Insurance and the range fire

Range fires are the classic chip-shop claim, and the loss adjuster's first question is when the extract system was last cleaned to a recognised standard. A shop that has been wiping the hood and swapping filters, with no certificate and no photographs of the duct interior, is the claim that gets challenged. Quarterly certificates are the answer, and they cost a fraction of a refused claim on a burnt-out shop.

Seafront and seasonal shops

A seafront chippy at Mumbles or Aberavon does a year's frying between Easter and September. That concentrates the grease load into a few months, so a pre-season clean in March or April, a mid-season check in July and a post-season clean before the system sits cold is a better pattern than a fixed calendar. Town-centre shops trading year-round stay on a straight quarterly schedule.

Booking around service

Chip shops cannot lose a Friday. Cleaning is arranged for a closed morning or the quiet hours before lunch, and a single-range shop is usually done in a few hours. You will be told how long before you book.

Your hygiene rating

Environmental health officers look above the range. Grease dripping from the canopy edge and blackened filters count against the "cleanliness and condition" element of your Food Hygiene Rating, and in Wales the sticker is mandatory on the door. A documented extract clean improves both your fire safety and your rating in one visit.

Frequently Asked Questions

How often should a chip shop extraction system be cleaned?

Every three months under TR19 guidance — range frying puts chip shops in the heavy-use band on hours alone, and the fat load makes the interval more important, not less. Seasonal seafront shops usually take a pre-season, mid-season and post-season pattern instead.

Do I have to close for the clean?

Not for trading hours. A single-range shop is usually cleaned in a few hours on a closed morning. You will be told the time needed before you book.

Our staff clean the range filters. Is that enough?

It is essential housekeeping, but it is not a TR19 clean. Fat that passes the filters settles in the ductwork and fan, and that is where range fires spread. Only a full system clean with photographs and grease readings satisfies an insurer.

Does a dirty canopy affect my hygiene rating?

Yes. Cleanliness and condition of the premises is one of the three scored elements, and the area above the range is on every inspector's route.

Who does the cleaning?

We arrange and manage your enquiry and connect you with a specialist commercial kitchen extract provider covering Swansea Bay. They carry out the work to TR19 standard and issue the certificate and photographs.
